stuffed mushroomsMany times we want to have people over yet do not want the evening to consist of everyone sitting down eating. We want people to be mingling and roaming around getting to know people.

Maybe we will have some music playing in the background or maybe we will play cards or board games later on in the evening. Maybe this get together at your home is simply a predecessor to the actual evening out on the town.

Or maybe we do not have the space capacity in our home for that many people to have a sit down dinner yet want everyone to be served food.

We have come up with the perfect hors de oeuvres and sweet treats for your evening of fun, mingling and entertaining.

The 5 dishes will consist of a stuffed mushroom appetizer which will also serve as our vegetarian dish; a shrimp cocktail appetizer chilled and in a large martini type glass; a fresh fruit and cheese tray; a spicy meatball tray and a desert tray.

The shrimp cocktail appetizer speaks for itself and we all have our favorite meatball recipe. The fruit tray would be best served with pineapple, both purple and green grapes and cantelope. This will also give your menu coloring. However we are going to share with you the perfect stuffed mushroom vegetarian style dish we have found.

Here is our recipe for scrumptious stuffed mushroom caps using bread crumbs and Swiss cheese.

You will need to have:

  • 1/2 cup shredded Swiss cheese
  • 1 egg
  • 3 Tbsp bread crumbs
  • 1 clove garlic
  • 2 Tbsp butter room temperature and ¼ cup melted butter
  • 16 oz mushrooms

Combine all the ingredients in a bowl. This will consist of the crumbs, garlic, shredded Swiss cheese, egg, and 2 tablespoons room temperature butter. Stir and mix very thoroughly.

Take the stems off the mushrooms and put the mushrooms on a baking sheet, rounded top-side up. Brush the mushrooms with the melted butter Broil these for 3 minutes about 4 inches from the heat. Remove the mushrooms from the broiler and turn them over. Fill the mushrooms with the egg and cheese mixture. Now put the mushrooms back in the oven and broil for 1 to 2 minutes longer.

In regards to the desert tray our recommendations are chocolate covered strawberries, fruit tarts and possibly little cheesecake bites of some sort.
