There are various desert recipes you can consider, but also this delicious champagne vinaigrette. This way, you will have a fresh sauce you can use for your salads.
It will not cost you much (not by far) and you can prepare it exactly the way you like it.
Here is how the recipe goes. For any vinaigrette you generally need one part of vinegar and 3 parts of oil; for this one, you need three tablespoons Red wine vinegar, same number of tablespoons of Champagne, one clove of minced garlic, one tablespoon of Mayo (for creaminess), one teaspoon of Dijon mustard, half of teaspoon of sugar, salt and pepper to season it and half of cup of olive oil. To get the right consistence you must mix all the ingredients in a blender, except the oil, then stir them calmly all together.
It goes perfectly with most vegetable salads you can think of and it will also take those champagne leftovers off your mind.
