We are all so used to coffee cookies it probably never crossed our mind to replace them with something more soft, more creamy and way more flavored… like a cake!

It is incorrect to assume that any cake will go but if you only try a pumpkin&cranberry cake, for example, aside your cup of coffee, whichever it might be, the combination will amaze you.

What you need is one cup of chopped walnuts, half a cup of chopped pecans, two cups of fresh or frozen cranberries, three cups of flour, two teaspoons of baking soda and same quantity of baking powder, three teaspoons of cinnamon, one teaspoon of salt, half a teaspoon of ground ginger, a touch of black pepper if you’d like the cake spicy, one and a half cups of pumpkin puree and about the same quantity of granulated sugar, some butter, four eggs and one teaspoon of vanilla.

For baking the mixture, you will need one or two cake pans (depending on the size and preferably round) and about one hour to 70 minutes at 350 degrees F. Before serving, you can top it with icing, simply prepared from about two cups of sugar and two tablespoons of milk. And voila! The perfect match for your coffee is ready to be served. Bon appétit!
