There is one recipe, which can provoke every food lover: slow-roast pork rolls with apple chili chutney! Sounds delicious and even more – it’s exotic!
The ingredients you need are – 2.5 kg pork shoulder joint, 2tsp thyme leaves, 1tsp fennel seeds, 1 tbsp olive oil and buttered bread rolls for serving.
The ingredients for the apple chili chutney are 1 tbsp olive oil, 2 onions, 2 red chilies, 4 peeled apples, 4 tbsp vinegar, 4 tbsp caster sugar and 1 thyme sprig.
The first step is preparing the pork in a roasting tin, and then mix it with thyme, fennel seeds, oil, salt and black pepper. Roast it for 30 minutes in oven to 240C.
After that, cover it with foil and leave it in the oven, heated to 140C for the next 5 hours. While the pork is in the oven, prepare the chutney. First you need to heat the oil, and then add the onion and the chili for 15 minutes, till it is smooth.
Then you can add apple chunks, vinegar, sugar and 50 ml water to your mixture. Cook it for 20 minutes and don’t forget to stir it. After that scoop half of the mixture into a food processor and make sure it is soft and smooth.
Then add it back to the pan. It is time to check the pork and to make it crispier. That will happen, if you remove the foil and leave it for another 30 minutes. Cut the pork into strips and serve it as a sandwich in buttered rolls with apple chili chutney.
