If you’re tired of having the same old ham and eggs every morning, you can still have a traditional breakfast and add enough zest to get your eyes out of the morning paper.
You should never say you are all for tradition until you tried this amazing combination of eggs, roasted chorizo and crunchy potatoes, in a mixture of Mexican –Californian combination of tastes.
First make sure you count the people for which you cook this breakfast so you could get the portions right.
You will need olive oil, just enough to grease the pan, some chorizo slices, Yukon potatoes and one large egg per person.
Boil the potatoes until slightly cooked. In a pan, heat the olive oil and add the chorizo. Peel the boiled potatoes and cut them in fours. Add them to the roasting chorizo and cook until golden.
Make some holes in the composition and add the eggs. Cook on the rack in the middle of the oven for 12 min.
The result is a complete breakfast full of flavors and slightly different from tradition. This does not mean it is less than amazing.
