Italian soups can be quite filling with their use of lentils, vegetables and meat. They are a complete meal with plenty of carbohydrates, proteins, vitamins and minerals. You could easily term them as diet food or even as frugal food.

This simple lentil soup is spiced up with Italian sausage. Here is a rapid review of the soup.

Heat some olive oil in a large pot at medium height heat. Add cooked hot Italian sausage (diced into one fourth inch cubes) and sorting till brown. Stir occasionally. Remove the browned sausages to a bowl. Add carrots, onion, celery, parsnips and Italian seasoning to the drippings left behind.

Cook until vegetables start softening and the onion turns translucent, stir often. Add the lentils and mix properly. Add three pots chicken broth and bring it to a boil. Lower the heat and simmer until the lentils are done. Stir occasionally and add broth if the soup looks thick. Add the sausage and simmer until the flavors blend and vegetables become tender. Season with salt and pepper. Add plenty of baby spinach and cook until it wilts. Serve it hot.

This filling lentil soup is a complete meal by itself, a good option if you want to have a simple but full of flavor meal.
