This delicious dessert is now easy to prepare. The ingredients you need are: 2 tablespoons sugar, 1 tablespoon fresh lime juice, 3 Bosc pears.
For the cake, you will need 1 cup flour,1/4 cup cornstarch, 1/2 tsp salt, 1/2 tsp baking powder, 1/4 tsp baking soda, 1/8 tsp ground allspice,1/8 tsp ground ginger,1/8 tsp ground black pepper,1/2 cup unsalted butter, 3/4 cup sugar, 2 eggs,13-inch piece vanilla bean, 3/4 cup buttermilk, powdered sugar and 1 1/2 cups crème fraîche.
Mix together sugar, lime, pears and salt in a saucepan. Cook the mixture together for 12 minutes and set aside. For the buttermilk spice cake you will need to butter and flour a cake pan.
Combine the ingredients for the cake into a bowl, add sugar and beat them with mixer until smooth. Put together the eggs, the vanilla bean and the lime peel. Beat them to blend and add to buttermilk mixture.
Transfer the whole batter to a pan. Cook for 30 minutes. Let it cool and cut into pieces served with pear compote or crème fraîche.
