Shrimp And Cheddar Cheese – The Best Treat For A Light Evening Meal

Light, delicious and healthy – that’s three words, which are able to describe one of the best recipes for shrimp &cheddar grits.
The ingredients are: 1 14-ounce can reduced-sodium chicken broth, 1 1/2 cups water, 3/4 cup quick grits, 1/2 teaspoon ground pepper, 3/4 cup extra-sharp or sharp Cheddar cheese, 1 pound peeled and deveined raw shrimp, 1 bunch scallions, 1 tablespoon olive oil, 1/4 teaspoon garlic powder and salt.
First step is bringing together the broth and the water into a heated saucepan. Add the grits and the pepper, and reduce to medium heat. Cover and cook for no more than 7 minutes.
Remove it from the heat and meanwhile prepare the shrimp. Add in a bowl the toss shrimp, garlic, oil, pepper and salt, mix them well and place the mixture into a rimmed baking sheet. Broil it, until the shrimp became pink, up to 6 minutes. Then top the grits with the broiled shrimp and scallions.
