The filling requires 1 1/2 tsp. vegetable oil, 1 cup chopped onion, 1 leek, white part thinly sliced, 1 cup diced turnips, 1 diced carrot, 3 sprigs fresh thyme,1/4 cup white wine or water,1 15-oz. can cannellini beans, rinsed and drained,1 cup low-sodium vegetable broth and 3 tbs. shredded Parmesan cheese, optional.
First you need to prepare the sweet potato topping. Add sweet potato in a large pot, filled with water. Boil for 10 minutes and then drain. Mash with milk, cinnamon, margarine and nutmeg. Set it aside, until you are preparing the filling.
Next is to heat oil on medium heat, add leek and onion leaves for 5 minutes and after that combine it with turnips, carrot, rosemary and thyme. Cook the mixture together, until smooth. Then add wine, beans and broth. Simmer it for less than 10 minutes.
