Here is a recipe that will surely make happy any housewife – quick lamb curry. In case you have little time, we are offering you the option of a tasty dish that can be ready in less than an hour.
The ingredients you need are: 1 tbsp vegetable oil, 500gms lamb fillet, 1 onion, 1 garlic clove, 1 tsp grated fresh ginger, 2 tbsp korma curry paste, 1 1/2 cup (375ml) beef stock or water, 1 large peeled potato, cut into cubes, 1 large carrot, 1/2 cup frozen peas, 200ml coconut milk, coriander leaves for garnishing and steamed rice.
The first step is to prepare the lamb. Heat the oil in a large sauce pan and add the lamb and brown it in batches. Set aside and reduce the heat to medium. Add garlic, onion and ginger to the pan and cook together for no longer than 6 minutes. Add the paste as you stir carefully and leave it for 3 minutes.
Return the lamb into the pan, bring the boil and add the stock. Start to simmer for 30 minutes. Last step is to add the carrot, potato and the coconut milk together. Combine the mixture well and cook for 25 minutes. Serve warm and garnish with coriander and rice.
