Here is a vegetarian dish that will certainly leave you a pleasant surprise. The pasta with roast pumpkin, feta and basil is a perfect recipe for the spring season. The ingredients you need are: 375g fettucine , half small butternut pumpkin, 60ml olive oil, 2 tbsp lemon juice, 1 tsp finely grated lemon zest, 125g feta, 3 roasted red capsicums and 1 cup baby basil leaves.
The preparation is easy. The first step is to cook the pasta in a large saucepan of boiling salted water. Cook until tender and drain. Toss the pumpkin with the olive oil and set a layer on a baking tray.
Roast it in the oven at 200°C for no longer than 20 minutes. Prepare the dressing as you place 2 tablespoons of oil, combined with lemon juice and zest in a small bowl.
Add pasta, basil, capsicum and feta in the bowl and whisk it well. Season it with pepper and salt and stir the mixture through the prepared pumpkin. Add the dressing and serve.
