There is one recipe, which will surely surprise you with its different taste and approach- the lemon grass chicken.
The ingredients you need are: 1 tbsp peanut oil, 600g single chicken breast fillets, 1 fresh chili, 2 stems chopped lemon grass, 2tbsp fish sauce, 1 tbsp caster sugar, 3 shallots, 55g peanuts and steamed rice.
The preparation is easy and fast. Heat oil in a large saucepan and add one-third of the chicken. Leave it for 3 minutes, until brown and remove. Transfer it into a place. Repeat the same with the other chicken parts and make sure the oil is enough heated.
Combine chili and lemon grass and stir-fry them for 2 minutes. Then simply add the chicken, the fish sauce, sugar and half of the shallot in the saucepan and leave them together for 2 minutes.
Divide the mixture between the plates as you scatter the peanuts and the rest of the shallot over the plates. You can serve with steamed rice.
