Here is one elegant recipe for raspberry cheesecake that is delicious and will impress the guests at your dinner table.

The ingredients you need are: 50 g butter, 8 digestive biscuits, 350 g cream cheese, 2 tablespoons caster sugar, 2 large eggs, 3 drops vanilla extract, 142 ml tub soured cream, 150 g raspberries, 200 g jar raspberry coulis.

The first step is to melt the butter as you crush the biscuits and add them to the melted butter. Add the mixture in an oiled tin.

Meanwhile, beat the cream cheese with the 2 tablespoons of caster sugar.

Set aside and beat the eggs with the vanilla extract in another bowl and then mix with the cheese. Spread the vanilla mixture over the tin.

Bake on the centre shelf for 30 minutes and remove. Spread the soured cream over the baked cheesecake, add sugar and bake for another 5 minutes. Remove it and cool for 30 minutes. Decorate the cake with raspberries and sprinkle with raspberry coulis.
