Green Beans And Corn Salad For Hot Days

First you will want to make the dressing for this dish. To do this you will put 3 tbsp of sherry vinegar, ¼ cup extra virgin olive oil, pepper, salt and 1tsp Dijon mustard in a bowl.
Whisk ingredients together until well blended. When this is done, set mixture to the side until the rest of the dish is prepared.
Cut the kernels off of 4 large ears of grilled corn into a large mixing bowl, cover the corn with 1pt halved cherry tomatoes, 1lb cooked green beans, 1cup shredded basil leaves, ½ thin sliced red onion.
Remember the original mixture with the mustard? It’s time to get that and sprinkle it over the top of the salad. Put 4 oz of shaved ricotta salata over the top and voila!! Green Bean and Corn Salad! Enjoy!
