Preparing the typical Italian Panzanella is easy and fast.

The ingredients you need are: 4 tablespoons extra-virgin olive oil, 1 clove garlic, 4 cups 1/2-inch crusty multigrain bread cubes, 1 pound coarsely chopped peeled cooked shrimp,4 large ripe but firm tomatoes, 2 large green, red and/or yellow bell peppers, 3/4 cup chopped fresh parsley, 1/4 cup chopped fresh chives, 1/4 cup sliced pitted Kalamata olives, 3 tablespoons red-wine vinegar, 1 1/2 teaspoons chopped fresh thyme, ground pepper and 4 cups mixed salad greens.

The first step is to preheat the oven to 350°F and meanwhile place the oil on a baking sheet.

Combine garlic and oil, as you stir bread cubes into a bowl. Mix them well and bake, as you stir every 5 minutes. Leave for 15 minutes and cool.

In another bowl combine tomatoes, shrimp, peppers, parsley, chives, olives, vinegar, thyme and oil.

Mix it well and season with pepper. Add the croutons and serve it with the greens, as you make sure the croutons and the shrimp mixture are well combined.
