Here is one amazing recipe for preparing baked four-cheese gnocchi with walnuts. This meal is light and very good for the summer.
The ingredients you need are: 300ml thin cream, 60g parmesan, 25g gorgonzola cheese, 50g shredded mozzarella, 50g Taleggio cheese, 1 tbs plain flour, 1 tsp Dijon mustard, 1/4 tsp grated nutmeg, 500g potato gnocchi, 1 egg, 50g toasted walnuts , 1 tbs finely chopped fresh parsley and 2 tbs dried breadcrumb.
The first step is to combine cream and cheeses in a saucepan. Stir on low heat and make sure the cheese is melted. Set aside and add flour, nutmeg and mustard, salt and pepper.
Put it on the heat for no longer than 1-2 min and remove. Prepare the gnocchi and set aside. In another bowl combine the cheese sauce, the parsley and the walnuts.
Combine them well and divide the gnocchi between 4 bowls. Add the cheese sauce over each gnocchi bowl, add the breadcrumbs and put in the oven. Bake it for 10 minutes and remove.
You can serve it cool with vegetables.
