In case you want to prepare a different barbeque recipe, here are two delicious and really different recipes.
The first one will surely bring compliments to your table.
The ingredients you need are: 1kg BBQ plum marinated chicken wing pieces, 2 cups brown rice, 2 1/2 cups (625ml) water, 1 chicken stock cube, 1 zucchini, 420g can corn kernels, 2 shallots, 2 tsp grated ginger, 2 tbsp lemon juice, 2 tbsp oil and 1 bunch fresh coriander.
Bake the chicken in a preheated oven to 200°C for nearly 50 minutes. Meanwhile bring together the rice, the water and the stock cube in a saucepan.
Cook them for 25 minutes and simmer well. Leave the rise to steam for 10 min and add the zucchini, corn kernels, shallots, ginger, lemon, oil and coriander. Cover it for 5 min and season with salt and pepper. Serve with the chicken wings as you can combine with vegetables.
The other recipe is also different. It is the Chipotle-Mango BBQ Chicken. The ingredients you need are: 1 1/2 cups mango, 3/4 cup fresh cilantro, 2 chipotle peppers, 2 tablespoons unseasoned rice, 4 cloves garlic, lemon juice, 1 tablespoon canola oil, 2 pounds chicken thighs and drumsticks, salt and pepper.
Combine the mango, cilantro, chipotle, vinegar, garlic, and lemon juice, 1 tablespoon of oil and salt and pepper, in a food processor and puree them.
Add the chicken and mix them well. Put in a plastic bag and refrigerate for nearly 6 hours to marinate. Leave a bit of the mango mixture and put it in a saucepan. Stir for 15 minutes and set aside. Grill the chicken as you brush it with canola oil. It will take nearly 25 minutes for each piece of chicken. Combine the grilled chicken with the sauce and serve cool.
