Pasta can be delicious and yet healthy. Here is one recipe that proves it.
The ingredients you need for preparing “Three-mushroom noodles” are: 185g wide long-life noodles, 1 bunch broccoli, 2 tsp vegetable oil, 8 green shallots, 80ml (1/3 cup) hoisin sauce, 1 x 150g punnet oyster mushrooms, 1 x 100g punnet shiitake mushrooms, 1 x 100g punnet enoki mushrooms.
The first step is to cook the noodles in a saucepan. Meanwhile, add the broccoli and discard. Heat oil in a different pan and add the broccoli, fry them for 3 minutes and add the shallots, stir well and then add the oysters, the shiitake mushrooms and the hoisin sauce.
Cook for no longer than 1 min and top the noodles with the mixture.
Another recipe for the diabetics is the Pasta with Eggplant & Tomato Sauce.
The ingredients you need are: 1 medium eggplant, 128-ounce can Italian-style tomatoes, 6-ounce can Italian-style tomato paste, 4-ounce can (drained weight) sliced mushrooms,1/4 cup dry red wine or beef broth, ½ cuppitted kalamata olives, 2 tbs fresh parsley, pepper, 4 cupshots cooked penne pasta, Parmesan cheese and 2 tbs toasted nuts.
Prepare the ingredients for cooking and combine together the eggplant, the onion, the undrained tomatoes, as well as tomato paste, mushrooms, broth, garlic and pepper. Cook on low-heat for nearly 1 hour.
Stir in the parsley and the olives as you season with salt and pepper. Top the pasta with this sauce, Parmesan cheese and the toasted nuts.
