The Thumbprint cookies are one of the most popular sweets, so you should certainly try them out. The preparation isn’t difficult at all. Neither does it take much time.
The ingredients you need are: ½ cup unsalted butter, ¼ cup white sugar, 1 egg, ½ tsp vanilla extract, 1 cup flour, 1/8 tsp salt, ¾ cup of hazelnuts, almonds, pecans or walnuts and ½ cup of jam.
To prepare the cookies, preheat the oven to 350 degrees. Take a large bowl and beat the butter and the sugar with an electric mixer. Beat for nearly 3 minutes and then add the egg yolk and the vanilla.
Beat the whole mixture until it is smooth and make sure it is well mixed. Whisk the egg in another bowl, chop the nuts and set aside.
Meanwhile, add the flour and the salt into a different bowl, whisk them well and then add to the batter. Make sure the batter is not too soft. Roll the dough into 2.5cm balls.
Dip each of the balls into the egg white and add some nuts on the top of the ball. Place them on a baking sheet and make an indentation in the center of each of the cookie. Fill them with jam and bake them for nearly 15 minutes.
