Christmas is about to come, so if you are still wondering about the turkey, here is a recipe that will help you impress your guests. The Christmas turkey stuffing is usually different than the Thanksgiving one.
The ingredients you need are: 2 oz butter, fresh sage, 12 strips of pancetta, 1 bulb of garlic, 4 red onions, dried apricots, 300g minced pork, zest of 1 lemon, nutmeg, 1 large organic egg, rosemary, 2 carrots, 1 orange, olive oil, 2 tbsp flour, vegetable stock and one large turkey.
Start with the stuffing. Heat the oil in a saucepan and add the butter. Leave for 2 minutes and then add the pancetta, the bacon strips, the garlic, the celery and the onion. Fry the mixture until golden brown. Set aside and add the breadcrumbs.
Cool the mixture for a while and add the pork, the nutmeg, the zest, the egg and season it. Mix all the ingredients well. Prepare the turkey for the stuffing and add onions, carrots and the remaining pieces of the pancetta.
Lift the loose skin on the neck and stuff the orange into the cavity. Place the turkey in the oven as you roast it under a tinfoil. In the last 20 minutes, remove the tinfoil and roast until it becomes golden brown.
