There is nothing like homemade chocolates for the Valentine`s Day. Here are few recipes that will make your holiday special.
The first recipe is chocolate-covered cherry cordials. The ingredients you need are: 1 1/3 cups sugar, 3 tbsp. light corn syrup, 1 tbsp. kirsch or brandy, 1/4 tsp. inverts, 30 maraschino cherries with stems attached, 1 lb. dark chocolate, 2 tbsp. vegetable shortening and1/4 cup water.
The first step is to prepare the fondant. Whisk the sugar, the corn syrup and the water. Pour the mixture into a saucepan and cook for 10 minutes, set aside and mix it with mixer until the fondant is white. Take a cherry by holding it on the stem and submerge it in the fondant. Transfer it to paper-lined baking sheet and repeat. Meanwhile add the chocolate and the shortening in a bowl and set it over a pot of bowling water. Stir well, until the chocolate is melted. Set aside and let it cool for a while. Drop each cherry into the chocolate mixture and return it to the baking sheet. The chocolate coating should be cooled down, in order to serve the cherries.
In case you are not pleased by this recipe, there is another recipe that is even easier to prepare.
The ingredients you need are: 1 cup of cocoa powder, 1 ½ cup of sugar, 1 dash of salt, 1 ½ cup of water, and 1 tsp vanilla extract. You can also add chopped nuts or caramel extract. Combine all the ingredients in a saucepan. Mix them well and stir until the mixture is blended. Place it on the heat and cook for 5 minutes, until the chocolate sauce thickens. You can serve it over pancakes or ice cream.
The rich hot fudge sauce recipe is also delightful. The ingredients you need are: ½ cup of cocoa powder, 1/3 cup of sugar, 1/3 cup of brown sugar, 3 tbs butter and ½ cup of heavy whipping cream. At first, blend the cocoa powder with the sugar. Melt the butter over low heat and mix it with the cream as you stir carefully. Leave it for 5 minutes and add the cocoa and the sugar mixture. Cook for 10 minutes, until the mixture is blended and serve cooled. You can add some fruits and nuts as decoration.
