There are a lot of people who have some problems with certain kinds of meat. There might be religious reasons for this, but also some reasons that are related to health.

For example it is known that red meat isn’t the healthiest food of all. This is why chicken seems to be the most popular kind of meat. The advantage is that there are many different ways to prepare it and it never really goes out of fashion.

Ways to Roast Chicken

The good thing about this meal is that it can be cooked fast, and it is also really appetizing. The chicken gets a nice brown color when roasted and there are numerous ways to spice it up and turn it into an original roasted dish.

One of the most interesting methods is adding wine to the chicken, although this might reduce the brown color. One of the advantages of this method is that the chicken breast meat doesn’t dry out as it does when you plainly roast it.

To create this meal all you need is a whole chicken. In case you want a lighter dish make sure you remove the extra fat.

You will need a few tablespoons of extra virgin olive oil, freshly ground black pepper, peeled garlic, cloves and for the garnish you can choose fresh herbs. Optionally you could also add some spices such as rosemary, tarragon and thyme.

Turn the oven on and heat it. After a few minutes put a cast-iron pan on a rack placed on the lower part of the oven. Apply the olive oil on the chicken, add salt and pepper and also the other spices in case you are using them.

After the oven and the pan have been heated place the chicken inside it with its breast up. If you have decided to use garlic, add it inside the chicken.

Roast the chicken for about 40-50 minutes. Make sure that the juices from the cavity of the chicken flow into the pan. After the cooking time has passed, probe the tenderness of the meat using a fork. In case it is not done you should cook the chicken for a little while longer.

Once it is done, put the chicken on a platter. For serving quarter the bird and serve it with mashed potatoes and greens. The juices resulted from roasting can be used as a sauce but make sure they are hot when you serve them.

If you would like to do the entire process a little more elegantly, start roasting the chicken without adding the olive oil.  When the chicken is half done, add a mixture of olive oil and parsley, basil, chervil or dill. In the end serve it decorated with more herbs.

There is also the lemon-roasted version of the roasted chicken. In this case brush the chicken with the olive oil. Then cut a lemon in half and place it in the cavity of the chicken. Roast the chicken until it is well done and gets a beautiful brown color. In the end squeeze the juice of the cooked lemon over the chicken and serve it.

You could add a sweet and exotic taste to the chicken if you brush or spoon over the halfway cooked chicken a mixture of orange juice, garlic, honey, cumin, salt and also pepper according to your taste. In this case the roasting time is a bit longer and can take about 60 minutes for the chicken to get crispy and savory from the exotic mixture.
