Potato is considered to be something basic when it comes to food. The best thing about it is the versatility that it offers. There are numerous different meals that we can do with the help of potatoes, and one of the best is the potato salad. Even in this case there are many different recipes to try and some of them are to die for.

As an example there is Bobby Flay’s Grilled Sweet Potato and Scallion Salad. For this you will need four large sweet potatoes par cooked and cut into half inch slices, 8 scallions, ¾ cup of olive oil, two tablespoons of Dijon mustard, half cup of cider vinegar, ¼ cup of balsamic vinegar, two teaspoons of honey, salt, pepper, and ¼ cup of flat-leaf parsley.

Potato SaladTo create the dish you will need to preheat the grill. Then brush the potatoes and the scallions with ¼ cup of oil, and arrange them on the grill. Grill the potatoes on each side for a couple of minutes.

Then grill the scallions for about 2 minutes. Once they are done, slice the scallions into thin slices.

Take a bowl and mix the remaining olive oil, mustard, vinegars and honey. Add some salt and pepper for the taste.

In the end add the potatoes, scallions and parsley and mix until the potatoes are well coated.

There is also the classic picnic potato salad that you should try. For this you need 3 pounds of red skinned potatoes, cut into 1 inch chunks, ¼ cup of white vinegar, 1 tablespoon of olive oil, two teaspoons of brown mustard, salt, pepper, ½ cup mayonnaise, 1/3 cup of milk, 2 small celery stalks, sliced to thin slices, and also 2 green onions.

Place the potatoes in water so that it covers them and boil over high heat. Then reduce the heat, cover and simmer for 8-10 minutes. In the end the potatoes should be fork tender. While the potatoes are getting ready mix the vinegar, mustard, oil, pepper and salt with a wire whisk.

Then drain the potatoes and add them to the bowl with the vinaigrette. Stir the mixture gently with a rubber spatula until the potatoes are evenly coated. Then just let it cool for about 15 minutes.

In a smaller bowl mix the mayonnaise with milk with the help of a wire whisk until it is smooth. Add the mayonnaise mixture to the potatoes along with the celery and the green onions. Gently steer until evenly mixed. You could serve it warm or cover it and refrigerate for a day.

Some other healthy potato salad recipes include Mediterranean potato salad recipe, basic potato salad, roasted green bean and potato salad, sweet potato salad with buttermilk dressing, warm Asian potato salad, warm Dijon potato salad, and potato salad with cornichons and capers.

As you can see, it isn’t difficult to make these salads, and it doesn’t take a lot of time either to make the simplest veggie into a great treat for lunch or dinner.
