Roasted garlic-edemame spread
The ingredients for this appetizer include a garlic bulb, a tablespoon of olive oil, two cups of cooked edemame, half a cup of ricotta cheese, ¼ cup of chopped basil, two tablespoons of lemon juice, ¼ cup of olive oil, a teaspoon of salt, a half of freshly ground pepper and also a selection of fresh vegetables.
Start by preheating the oven. Then cut off the pointy end of the garlic bulb, place it one aluminum foil and add a tablespoon of olive oil.
Seal the foil and cook the garlic for half an hour, then let it cool. Once you are done, add the garlic pulp to a bowl.
Process the edemame until it is smooth. Then add to it the garlic, basil, ricotta, and lemon juice and blend the ingredients together.
While the processor is still running, add ¼ cup of oil. Season with salt and pepper and also add the fresh vegetables. This is the last step of the process.
Mini crab cakes with garlic-chive sauce
To prepare this appetizer you will need a package of crabmeat, 3 bread slices, 1/3 cup of mayonnaise, three sliced green onions, a teaspoon of Old Bay seasoning, a teaspoon of Worcestershire sauce, two large eggs, cooking spray and salt and pepper.
Prepare the crabmeat and add the bread slices to the blender and process them. Then add the mayonnaise and the four following ingredients to a bowl. Add to them the bread and the crabmeat. Then create cakes of the mixture.
Cook each of the cakes in a pan that you spray with cooking spray. You should cook them until they get a golden brown color, and in the end add some seasoning to them, according to your taste. You could serve the cakes with Garlic-Chive Sauce if you want to, and you could also add some kind of garnish.
Melon, Mozzarella and Prosciutto Skewers
To prepare the appetizer you will need 20 cantaloupe cubes, 20 slices of prosciutto, 20 mozzarella cheese balls, 20 wooden skewers and some pepper. All you have to do is to add the ingredients to the wooden skew.
