Winter parties happen more often than you might think, and it is possible that you are going to be a hostess of one of them. If this is the case, then you should make sure that you serve appetizers that will leave your guests amazed, and you don’t have to think about something very complicated.
Portabello Mushrooms with Creamy Spinach-Artichoke Filling
This is a vegetarian appetizer and in order to prepare it you should have three tablespoons of olive oil, three minced garlic cloves, four portabello mushrooms, salt, pepper, four oz. of cream cheese, three tablespoons of mayonnaise, some fresh thyme, 9-10 oz. chopped spinach, nine oz. frozen artichoke, half a cup of panko or breadcrumbs, and 1/3 cup Parmigiano-Reggiano.
Start with preheating the oven. Then get a smaller bowl and mix the olive oil and 2/3 of the garlic. Coat the insides of the mushrooms with this mixture and then add some pepper and salt. Put the mushrooms on a baking sheet in order to roast them in the oven for 10 minutes.
While the mushrooms are roasting, get another bowl and mix the mayonnaise, cream cheese, and thyme. Once they are mixed, add the spinach and the artichoke and season the mixture with pepper and salt. In another bowl, mix the garlic that you still have, oil, a bit of thyme, cheese and breadcrumbs.
Once the mushrooms are done, add to them the spinach and artichoke mixture and then add the breadcrumbs as well. Bake the mushrooms for another 10 minutes, until the breadcrumbs will get a golden color. Serve right after the mushrooms are done.
Chipotle Black Bean Dip
If you have in mind serving tortilla, this is a dip that works like magic in case of parties. For the dip, make sure that you have at home two tablespoons of olive oil, half diced yellow onion, one minced medium clove garlic, some cumin and coriander, a can of black beans, some fresh cilantro, a bit of chipotle, lime juice and also some salt and pepper for the seasoning.
Put a tablespoon of oil into a skillet and heat it over medium heat. Then add the onion and cook the mixture until the onion gets soft, for about 3 minutes. Add the cumin, garlic and coriander and cook for another half of minute.
Put the mixture aside to allow it to cool, and then mix the onion with cilantro, chipotle, lime juice, salt, pepper, the remaining oil and a bit of water. Add all the ingredients to a food processor. Make sure that in the end you will have a smooth paste. Then just put the paste in a serving bowl, decorate it and serve it.
Roasted Red Pepper and Feta Dip
For this feta dip, you need three medium red bell peppers, a clove of garlic, half a cup of crumbled feta, two tablespoons of dry breadcrumbs, two tablespoons of lemon juice, two tablespoons of olive oil and three tablespoons of fresh dill.
