When winter comes a lot of people would like to prepare desserts that warm them up. There are a lot of choices to choose from, but the majority of the people opt for those that come with the special flavors of the season, like chocolate, apple, cinnamon and so on.

Flourless chocolate hazelnut cake

This is one of those famous cakes that you can prepare without using flour. The ingredients that you need include a cup of hazelnuts, one and a quarter cups of sugar, eight ounces of chopped chocolate, four tablespoons of margarine or butter, five large eggs and ¾ cups of whipping cream.

The cake

Preheat the oven and grease the pan that you will use. Then line the bottom with paper, and grease the paper.

Put the hazelnuts into a jelly-roll pan and bake them for about 10-15, until they are fully roasted. You could shake the pan from time to time. Remove the hazelnuts from the heat and clean them with a towel. Roll them with your hands to make sure that you remove as much skin as possible. Allow the nuts to cool.

Put in the food processor ¾ cup of nuts and ¼ cup of sugar. Ground the mixture until it is fine. The remaining hazelnuts should be chopped by hand to have a rough texture.

Melt the butter or margarine and the chocolate in a saucepan. Make sure that you stir it. Get a large bowl and add the eggs, half a cup of sugar and beat the mixture with a mixer until its volume has tripled.

Add the beaten eggs to the chocolate and in the end also add the ground hazelnuts. Pour the batter to the pan that you have prepared and bake it for about 35 minutes, or until you see that the top of the cake is dry. You could also perform the toothpick test. Get the pan out and let it cool for about 10 minutes. Then remove the cake from the pan and let it cool for another period of time.

The praline

Get a cake pan and add to it some foil. Add to the pan the hazelnuts that you didn’t use. Add the remaining half of cup of sugar to a skillet and melt it. Make sure that you don’t stir the sugar.

Once the sugar is done, you should pour it over the hazelnuts. Allow the praline to cool in the pan. Once it is cool it will become hard, so that you can break it. Divide the praline into 12 pieces. Put the whipping cream in a bowl and beat it until the praline cools.

To serve the cake you should cut it to servings, and add to each serving some whipped cream along with a piece of praline.
