When people are thinking about kosher recipes for Hanukkah, they usually have in mind potato pancakes and jelly doughnuts. Although these are really popular, there are some others as well that you might want to try.
1. Cottage Cheese Latkes
In case you are looking for something new besides the good old latke, then this is something that for sure you will enjoy. It can be done in 20 minutes. The ingredients that you need include three eggs, a cup of milk, a cup of creamy cottage cheese, a cup of matzo meal, a teaspoon of sugar, ¾ teaspoon of salt, half a teaspoon of ground cinnamon, and some oil for frying.
To prepare the latke you should beat the eggs with the milk and then add the cottage cheese. Then mix the sugar with matzo meal by adding cinnamon and salt. Add some oil to a frying pan and heat it. When the oil is hot enough, add some of the mixture to it.
Make sure that the pancake is flat enough for the center to cook as well. Fry the pancake for a few minutes until it becomes brown.
This is also a very tasty kind of food in case it is properly prepared. The only downside is that it requires quite some time to prepare it. The ingredients that you need include the brisket that is washed and drained, half a cup of oil, half a cup of coke, half a cup of dry red wine, half a cup of honey, two onions, 6-8 teaspoons of ketchup, and one teaspoon of paprika.
Start by placing the meat in the frying pan. Then put all the seasoning in a food processor and process them. Once you are done pour them over the brisket. Cover the pan and allow the brisket to marinate for the night. The next morning preheat the oven and then bake the brisket for about four hours.
Insert a digital thermometer into the meat and take the meat out when the thermometer reads 190°. Allow the brisket to cool and then cut thin slices against the grain. The secret is to slice the meat correctly. In case you don’t slice it against the grain, the meat will be tough.
3. Grilled vegetable platter
You need different kinds of vegetables for this dish, such as sweet potatoes, mushrooms, purple onion, bell peppers, zucchini, olive cooking spray, olive oil and eggplant. Also don’t forget about thyme and salt.
First wash and slice the different vegetables. Then add them to a baking sheet, arranging them into a single layer. Make sure that the baking sheet has baking paper or cooking spray. Add thyme to the vegetables and also salt that is supposed to be kosher. Cook the vegetables for 35-45 minutes. This time depends on how you would like the vegetables to be.
As you can see there are some simple recipes that you could prepare for Hanukkah, and naturally there are also those that require more time and expertise.
