In many cases people are too tired to prepare anything complicated for dinner, and so it might be a good idea to have some quick soup recipes as hand for cases of this kind. There are a lot of recipes that are easy and fast to create.

1. Tortilla soup with black beans

The ingredients of this soup include a tablespoon of olive oil, four minced garlic cloves, a teaspoon of chili powder, two cans of diced tomatoes, two cans of black beans, a can of chicken broth, a package of frozen corn kernels, salt, pepper, a cup of tortilla chips, and a tablespoon of lime juice.

To prepare the soup, put some chili in a saucepan and place it over the heat. Then cook the chili powder with the garlic, for about a minute. Once this is done, add the tomatoes, broth, beans, corn and a cup of water. Season as you wish with salt and pepper.

Mix the ingredients and bring the soup to a boil. Then just simmer it. Add the chips and heat the soup until they soften. Remove the soup from the heat and add the lime juice and add some more seasoning. You could serve the soup with lime wedges and maybe some more tortilla chips.

2. Creamy broccoli soup

There isn’t much you need for this soup: a tablespoon of olive oil, a sliced onion, some ground nutmeg, four cups of chicken broth, 1/3 cup of rolled oats, one and a half pounds of broccoli, and naturally some salt and pepper.

Heat the olive oil in a larger saucepan. Then add to the oil the onions and cook it until it softens, for about 5 minutes. Add the nutmeg to the mixture and cook it for another half a minute.

You need to add to the mixture the broth, oats, one and a half cups of water, and the broccoli. Add salt and pepper according to your taste. Then bring the soup to a boil and reduce the heat. Simmer the soup until the broccoli becomes tender.

Add the soup to a blender and create a soft puree of it. Again season it according to your taste.

3. Bean and pasta

The ingredients of this quick soup include a strip of bacon, an onion, two chopped carrots, two minced garlic cloves, half a teaspoon of dried rosemary, salt, pepper, a tablespoon of tomato paste, two cans of beans, four cups of chicken broth, ¾ cup of tubular pasta and some fresh parsley.

Cook the bacon at medium heat until it becomes crisp and browned. This takes about 8 minutes. Add the onion, and also the carrots. You need to cook the soup until the vegetables are soft. Also add the garlic and the rosemary. Add some pepper and salt.

Stir in the beans, tomato paste, four cups of water and broth. Bring the soup to a boil and then simmer it until the soup starts to thicken. To thicken the soup, you should mash some of the beans.
