Broiled Pineapple with Ice Cream

Directions: Preheat a broiler and coat the broiler pan with non-stick cooking spray.

Then core out pineapple wedges and then halve them to make 8 spears.

Now lay the spears on the pan and cook them until they turn golden brown and are tender (about 20- 25 minutes). Divide these into the bowls and add ample ice cream. The dessert is ready to be served.

Vanilla Roasted Peaches with Raspberries

Ingredients: 2 tablespoon unsalted, melted butter; 2 tablespoons fresh lemon juice, 2 tablespoon sugar, 1 vanilla bean or 1 teaspoon pure vanilla extract, 1 pint vanilla ice cream, 4 firm and ripe peaches (fresh, halved and pitted), 5 to 6 ounces of fresh raspberries.

Direction: Preheat the oven at 400 degree. In a shallow but large baking dish mix butter, lemon juice, vanilla bean/ extract and sugar.

Add to it peaches and coat them with butter and lay them in a single layer.

Roast the peaches in the oven until they are tender and there is a syrupy liquid.

Serve the peaches at room temperature with ice cream and fresh raspberries on top.

Rustic Apple Tart

rustic apple tartIngredients: 1/3 cup sugar, 1 large egg yolk (beaten for egg wash), 2 tablespoon unsalted butter, 2 tablespoon apple jelly, 3 granny smith apples, flour, 1 sheet frozen (thawed) puff pastry.

Directions: Preheat the over- 375 degrees, remove paper from pastry sheet fold it and roll it to an 8 by 14 inch rectangle on a lightly floured surface. Trim the edges and put it inside the freezer (on a baking sheet).

Peel and slice apples about ¼ of an inch. Brush the pastry with egg wash and place the apples on it leaving a ¾ inch border.

Bake until pastry golden and apples tender (30- 35 minutes). Now heat the jelly with little water until melted and glaze the apples before serving the dessert.
