1. Carrot soup

Easy to make! Start with melting the butter in a heavy large pot over medium-high heat. While stirring, add onions, after 4 minutes add finely chopped ginger and garlic, after 2 minutes add chopped lemon peel, tomatoes, and carrots, and stir for another 1 minute.

Add 3 cups of stock and start boiling it. Reduce the heat, partially cover it and let the carrots cook till they are very tender, it will take 20 minutes. Let it cool a bit. Then add puree soup in a blender in batches. Pour it back into the pot. Mix in lemon juice. Season with salt and pepper. Use stock to make it think if you want. Garnish with sour cream and grated carrot and it’s ready to eat.

2. Broccoli -Zucchini salad

Take 1/4 cup grated carrot, cabbage (only a little bit), 1 tbsp Grated coconut, 1 tbsp Coriander chopped finely, 1/4 cup Pomegranate seeds, 1/4 cup or less Finely chopped red and yellow bell peppers, 1/4 cup Finely chopped tomatoes, 1/4 cup Finely chopped cucumber, Small broccoli florets (only a little bit, too much doesn’t taste great), 1/2Lemon, 1 tbsp Honey. Mix them together. Add the lemon juice, honey, and salt. Toss the salad. That’s it!

The salad is ready!

3. Corn-carrot Sandwich

Start with the topping: Heat the butter in a pan, add 1 Tsp garlic, 1/4 cup chopped onions and 1 Tsp finely chopped green chilies and stir for 1 minute on a medium flame. Add 1 cup boiled and crushed sweet corn; 1/4 cup chopped tomatoes and salt, mix well and let it cook for 2 minutes on a medium flame and keep stirring it occasionally. Add 1/2 cup boiled carrot cubes and mix well. Keep aside.

Now, divide the topping into 8 equal portions. Keep aside.

Cut each hot dog roll horizontally into two-halves. Brush both the sides with little butter and keep aside.

Bake the brushed hot dog rolls in a preheated oven at 200°c for 10 minutes. Place them on a clean, dry surface; spread a portion of the prepared topping on each toasted hot dog roll half. Finally, sprinkle little spring onion greens over them and serve immediately. Delicious it is.

4. Waffles

Take a bowl, sprinkle 2 Tsp sugar and 1/4 Tsp yeast over 2 tbsp warm water, keep aside till frothy. Sieve together 1/2 whole wheat flour, 2 tbsp cornflour, salt to taste, and 3 pinches of baking soda.

Mix 2 tbsp warm milk, 1 Tsp honey, 1 tbsp butter, in a bowl. Slowly add the flour mixture in it then add the yeast solution, beat to a smooth paste.

Heat waffle iron, brush with butter. Pour the mixture on it, cook till golden on both sides. Serve hot and crisp with jam, cheese or even ice cream. Garnish with fruits like banana, strawberry, blue berry, and cream.

5. Triple Berry Shake

Take strawberries, raspberries, and blackberries (Approx 1 & 1/2 cups mixed), add 1 cup milk and 1 cup ice and sugar as per your taste. Blend in a mixer and serve cold. It will refresh you fully.
